Stuffed Parathas Recipe

Think about Punjabi food, and the first thing that comes to their mind is the parathas. It is one of the most preferred breakfast recipes of Northern India. Parathas the stuffed bread is enjoyed by one and all as it is a healthy, delicious and filling food. We Indians do not need a reason to indulge the hot steamy breads any time of the day.


We Indians call stuffed bread as parathas is a flat bread made of goodness of whole wheat flour, cooked on a tava in cooking oil or Ghee (clarified butter). The stuffed vegetarian parathas are often stuffed with vegetables, especially boiled potatoes, radish, cabbage, methi or cauliflower and/or paneer (Cottage cheese).

Stuffed paratha recipe

Methi Paratha Recipe:

Ingredients:

3 cups of whole wheat powder and 2 tsp besan(chickpea flour)
1 bunch of methi washed and chopped into small pieces
1 medium sized onion chopped into very small pieces
1 Tb.sp of chili powder
1 tsp salt

Preparation:

  • Make a dough of the above ingredients and make dough adding water only if required.
  • Roll the parathas as thin as possible and roast on both sides on tava(Indian griddle) until it is properly cooked.
  • Smear some ghee/oil if desired and the final result will look like cooked bread with brown spots.

Paneer Paratha Recipe

Ingredients:

1-1/2 cup Paneer(grated)
1 tbsp Coriander Leaves (chopped)
1 Onion (chopped)
5 Green Chillies (chopped)
3 cup whole meal flour
2 tbsp Ghee

1/2 tsp Salt ,Red chilli, Garam masala,Dhania powder(coriander powder). Adjust the seasoning according to taste.

How to make Paneer Paratha:

  • Prepare the stuffing material by mixing paneer, coriander, onion, green chillies and the other spices.
  • Make a firm but pliable dough with enough water added to the flour.
  • You have to make two small rounded balls and add the stuffing in the center.
  • Draw up the edges together and shape it as a roti
  • Place it on the heated griddle and cook it by adding ghee and it is going to take a minute.

Gobi ka Paratha or Stuffed Cauliflower Recipe:

Ingredients:

Wheat flour - 2 cups

grated cabbage or cauliflower- 1/2 cup

pepper powder - 1/2 tsp

green chillies crushed - 1 tsp

1/2 tsp Salt

Red chilli

Garam masala

Dhania powder(coriander powder)

How to make Gobi Paratha:

  • Prepare the stuffing material by mixing cauliflower, coriander, onion, green chillies and the other spices.
  • Make a firm but pliable dough with enough water added to the flour.
  • You have to make two small rounded balls and add the stuffing in the center.
  • Draw up the edges together and shape it as a roti
  • Place it on the heated griddle and cook it by adding ghee and it is going to take a minute.

Aloo Paratha Recipe: Stuffed Aloo Parathas

Ingredients:

Wheat flour - 2 cups

potatoes - ΒΌ kg

green chillies crushed - 1 tsp

1/2 tsp Salt

Red chilli

Garam masala

Dhania powder(coriander powder)

Amchur powder,

Finely chopped onions

Finely chopped coriander

How to make Aloo Paratha:

  • Wash well and boil the potatoes in a pressure cooker for 10 minutes, de skin and mash them well when they are cooled.
  • Add all the ingredients of set1 in it.
  • Make a firm but pliable dough with enough water added to the flour.
  • You have to make two small rounded balls and add the stuffing in the center.
  • Draw up the edges together and shape it as a roti
  • Place it on the heated griddle and cook it by adding ghee and it is going to take a minute.

Accompaniments along with Paratha:

Parathas are made especially when we have guests over or it is a special treat for the family. A paratha would be incomplete without the traditional lassi. It is served with mango or lime pickle , fresh youghurt, mint chutney and butter. Yes it is a complete meal and when you are done relishing the hot steamy breads you have no appetite left for anything else. This is soul food for me and my family, we delhites can just have this and relish it. Maa ke haath ke paratho jaisa koi swaad nahi(Mothers handmade parathas are the world best) is a popular saying.

For those persons who cannot imagine following this lengthy process to get the delectable taste you can dig into the frozen parathas section. They are easy and only require two minutes on each side on the griddle. It really would be a great substitute for the junk food or chinese take out.

It looks completely delicious but I have no idea what the ingredients are. Wheat powder? I wonder what that is, not to mention and besan. I want you to come over here and to make me some of this delicious looking stuff. I might have to go to the city to find the Indian cooking ingredients but I now have a goal in mind.

IzzyM, thanks for the comment. You might try it at an indian restaurant. However you might get a frozen one in comparison to the traditionally hand made.

Besan is chickpea flour, Wheat powder is Wheat flour. The extra refined form is what you have as White flour. You might have to try it at a local indian restaurant. However wouldn't mind cooking it for you.

Well, I either have or can get the ingredients I lack, I feel sure; and some of them are among my favorite flavours - garam masala is wonderful, as is coriander. I'm not sure what Amchur is, but I won't be surprised to find out it's an ingredient used in this area in other kinds of cuisine - something like cumin, perhaps?

It sounds delicious and, though I'm not a vegetarian, the biggest percentage of my diet is vegetables and fruits.

Habee, methi is fenugreek in English. It is one of the green leafy vegetables with a bitter taste, looks like the image below.
